Carrot and Walnut Cake

 

Ingredients :

140g / 5oz soft margarine

140g / 5oz Soft brown sugar

140g / 5oz Self raising Flour

2 medium eggs

1 teaspoon cinnamon

1 teaspoon bicarbonate of soda

2 large carrots – peeled and grated.

4oz Walnuts – chopped

Juice and rind of half an orange

 

Topping:

1 tub mascarpone cheese

4 oz icing sugar

1 tablespoon orange juice 

Carrot and Walnut Cake

Method:

Grease and line 7’ round or 8’ square tin

Beat together margarine ,sugar , flour , spices  and eggs .

Add grated carrot , walnuts and orange juice

Spoon into tin  and bake at 190 C / 375 F / Gas 5

Bake till golden brown and springy to touch.

Allow to cool before topping.

 

To make topping: 

Mix Mascarpone with orange juice and add icing sugar till stiff but moveable .
